Turkey Tuesday is back, folks! It’s been AGES since I’ve shared a recipe. July flew by and I was out of town for two weeks (combination of work / vacation) so that really put me behind.

A few key points about the recipe I’m sharing:

  1. It’s very flavorful
  2. It can be made spicy or not-so-spicy, depending on your preference
  3. it’s super fast (aka fabulous weekday meal)
  4. Scored 6 out of 10 from Joe, which makes me think he was fudging a little to appease his mama, but I’ll take it from the world’s-pickiest-eater

Quick note – I used Jennie-O Turkey Store Full Cooked Hardwood Smoked Turkey Kielbasa because that’s what Target had on hand. There is also a Jennie-O smoked turkey sausage version that would be wonderful.

I’m still hoping to post some vacation photos at some point, but life keeps getting in the way. We have wedding #2 and #3 this weekend – and they are on opposites sides of the Minnesota countryside. I guess a little road trip will be in order! (Wedding #1 was last weekend, and we will have one more to go later in August.)

Spicy Turkey Sausage Pasta

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb smoked turkey sausage or turkey kielbasa
  • 1.5 cups diced onion
  • 2 cloves garlic minced
  • 2 cups low-sodium chicken broth
  • 1 10 oz can Ro-Tel tomatoes and green chiles, Original
  • 1/2 cup heavy cream
  • 8 oz penne pasta
  • 1/2 teaspoon salt and pepper each
  • 1 cup Cheddar Jack cheese shredded
  • 1/3 cup thinly sliced green onions

Instructions
 

  • Add olive oil to an oven-safe skillet over medium high heat until just smoking.
  • Add turkey sausage and onions and cook until lightly browned, about 4 minutes.
  • Add garlic and cook until fragrant, about 30 seconds.
  • Add broth, tomatoes, cream, pasta, salt and pepper and stir.
  • Bring to a boil, cover skillet, and reduce heat to medium-low.
  • Simmer until pasta is tender, about 15 minutes.
  • Remove skillet from heat and stir in 1/2 cup cheese.
  • Top with remaining cheese and sprinkle with scallions.
  • Broil until cheese is melted, spotty brown, and bubbly.

Notes

I used Jennie-O Turkey Store Fully Cooked Hardwood Smoked Turkey Kielbasa.
For a milder spice, use the "mild" version of Ro-Tel.
