Sunday, Sunday, Sunday … here you are again.
I had a three-day weekend, which was FABULOUS but always goes too fast. Why? WHY? 😉
No worries – I’ll get over myself. I’ve got a busy Sunday ahead, with several LuLaRoe-related projects I want to work on ahead of my album sale on Facebook tonight. (Join me here!) Plus, if it doesn’t rain and the wind doesn’t pick up, I’m headed out to attempt a run. I say attempt because it’s been crappy for the past week or so and I have relegated myself to the elliptical machine in our basement. Which I hate. With a passion.
But anyway, here are some random pics from the long weekend.
One of my favorite parts of taking a Friday off is being a regular old mom who picks her kid up from school and treats us both to some Caribou Coffee – yum!!
Our Friday night tradition as of late has been to watch the week’s episode of Survivor, which we love! Plus it’s a great family show – all three of us enjoy it. This week, randomly, I noticed that Debbie looks remarkably like the Wicked Witch of the West. Yes?
Saturday morning I had an in-home LuLaRoe pop-up party so my Jeep was loaded down with over 500 pieces of clothing. Seriously! And I could still see out the back … 😉
After my in-home pop-up party, I got to meet this sassy little lady (my niece, Miss Morgan) for lunch (along with her parents) – it was a fun way to kick off Saturday afternoon!
Later that afternoon, Teacher Man and I had a little happy hour date at Hayes Public House, the local Irish brewhouse.
When we got home, I made the most perfect recipe for Turkey Tetrazzini on the planet, courtesy of my best friend, The Pioneer Woman, of course. And yes, there is plenty of turkey underneath all that bacon!
And while we were waiting for the tetrazzini to bake, I had to be a little goofball with my teenager, who loves to pretend he doesn’t want to smile for the camera. But I did coax a smile or two out of him!
This morning I felt the baking urge, as I often do on the weekend, so I tried these Peanut Butter-Chocolate-Oatmeal Muffins (with banana in there too). These are going to make a stellar breakfast tomorrow morning – and probably a delicious afternoon snack today too. 😉

Peanut Butter Oatmeal Chocolate Muffins
Ingredients
- 3 ripe bananas I used 4 because they were smaller
- 1 cup skim milk
- ½ cup peanut butter I used Skippy Natural - creamy
- ¼ cup pure maple syrup
- 2 eggs
- 3 cups old fashioned oats I used quick-cooking oats as that's all I had on hand
- ¼ cup chocolate chips I used chocolate chunks and a few white chocolate chips, too
- 1 tablespoon baking powder
- 1 teaspoon vanilla
Instructions
- Heat oven to 375 degrees.
- Mash bananas in mixing bowl
- Add rest of ingredients and stir well
- Line muffin pan with 12 paper/silicone liners
- Fill each one with batter (it will come to the top or even a bit heaping)
- Bake for 20-25 minutes or until tops become slightly browned
