I’m tired.
It’s 8:35 p.m. and it feels like at least 11 p.m.
I think it’s because this week has been killer at work. This is not a complaint – it’s just fact. Our biggest week of the year – the Midwest Poultry Federation Convention – starts next Monday and everyone in my office has been working their butts off to make this successful. I won’t bore you with all the details but suffice it to say we moved to a new venue after 20 years and that, my friends, isn’t easy to do. Everything — and I mean pretty much everything — is new.
So I’m tired.
But I’m enjoying a glass of wine and writing a blog post (instead of working!) so that makes me feel pretty good at the moment.
We’re going to make it through next week and I’m excited to see so many of my poultry friends. That’s what it’s really all about – connecting with work friends in the industry. And after 22 years of working for poultry farmers, I know a lot of amazing and very fun people!
And also … next Friday I will come home, collapse on the couch, and sleep for about 12 hours straight.
In the meantime, here’s an Instant Pot recipe from my friend Gretta at the Iowa Turkey Federation. Gretta is an excellent cook and a turkey lover just like me so I think you’ll like this one. Plus it uses two kinds of turkey products (like this amazing JENNIE-O® Italian turkey sausage!) so we’re #winning!
I know it’s not Turkey Tuesday, but hey, I also know you’ll cut this girl a break. I’ve been a little busy. 😉

Instant Pot Pizza Pasta
Ingredients
- 1 package 20 oz. hot Italian turkey sausage links (for more spice) -or- 1 package (16 oz.) mild Italian turkey sausage
- 1 package 5 oz. turkey pepperoni
- 1 box 16 oz. pasta (cellentani or your preference)
- 1 teaspoon Italian seasoning
- 1 can 10.75 oz. cheddar cheese soup
- 2 cups water
- 1 15 oz. can pizza sauce
- 46 oz. V8 vegetable juice low sodium
- 1 package 8 oz. shredded mozzarella cheese (or your favorite cheese)
Instructions
- Brown the turkey sausage in the Instant Pot®.
- Once it is thoroughly cooked, lower the temperature and add the remainder of the ingredients - except the cheese.
- Make sure the liquid covers the pasta, seal with the lid and proceed to cook for 9 minutes according to your pot’s instructions. (I used the "Rice" setting but you could do manual too!)
- Top with your favorite cheese and other ingredients such as olives, mushrooms or peppers
