Who’s ready for a Quick Turkey Bolognese? Yep, me too!

First … can we talk? I turned 51 last Tuesday and I finally got around to getting my colonoscopy screening today. (Don’t worry – this post won’t turn into TMI, I promise!)

I didn’t mean to put it off that long — I know how important this screening is and you should too – but hey, work happens, vacation happens, life happens. I’m happy to report it’s done now and the results were good.

Which means I don’t have to do this again for 10 years – thank goodness! If you haven’t had a colonoscopy screening, then I will tell you it’s true what everyone says: the prep is the worst part. The procedure is no big deal, thanks to anesthesia and an absolutely terrific staff (in my case) at Monticello Surgery Center.

My mom came last night to get me to my appointment at 7 a.m. today so the boys could have their usual Monday at their respective schools. (Thanks, Mom!) And bonus — she had planned lunch when we got back and made me this super quick and fantastic Quick Turkey Bolognese recipe, which I was so grateful for since I hadn’t eaten solid food since Saturday night.

While a colonoscopy isn’t exactly the most fabulous reason to hang with your mom for lunch, I’m glad she was here! And you will be too … give this recipe a try and let me know what you think!

What seasonings can I add?

You can also add more salt to your taste and spices to it to make it your own – including more Italian season and red pepper flakes if you want more spice. This recipe is very flexible.

Do I need to use spaghetti noodles?

Nope – you could easily sub ziti or penne or rotini or just about any pasta you love!

Quick Turkey Bolognese

Bolognese is usually a long, simmering process but this is a quick version that is very flavorful and perfect for weeknight family meals!

Ingredients
  

  • Choice of pasta for serving
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 pound ground turkey
  • 1 28 fluid ounce can diced tomatoes with juices
  • 1 7.2 fluid ounce can tomato sauce
  • 2 dashes Italian seasoning
  • 4 cloves garlic minced
  • 1/4 cup packed fresh basil chopped
  • Salt & pepper to taste
  • Parmesan cheese optional

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta according to package directions.
  • Add the olive oil and onion to a skillet and sauté on medium heat for 5 minutes.
  • Add the turkey to the pan and cook for another 5 minutes, stirring occasionally.
  • Add the canned tomatoes, Italian seasoning, garlic, and basil.
  • Increase the heat to medium high.
  • Once it starts to bubble, reduce the heat to medium and let it simmer for at least 10 minutes.
  • Season with salt & pepper.
  • Serve with pasta and freshly grated parmesan cheese.

Notes

  • My mom simmered this for 20 minutes but if you’re in a hurry, then 10 minutes is fine!
  • You can definitely add a little more Italian seasoning if you like.
  • Want some more kick? Toss in some red pepper flakes!
