Good morning, friends! I’ve just finished my coffee and this amazing Apple Fritter Bread, which was a perfect start to this rather cold, dreary day in Minnesota. 

It’s been a lovely weekend overall, I’d say.

Yesterday I had the house almost to myself. Teacher Man was deer hunting (no luck, unfortunately), and Joe went to a friend’s house for a birthday sleepover. That left me to my own devices, so I decided to explore a few occasional sales in my little community, Buffalo. 

What are occasional sales? These are shops that feature a variety of home decor, furniture, jewelry, and clothing – some of which have been recycled or “upcycled” and some brand-new – that are open the first Thursday-Sunday of each month. Occasional sales are Buffalo’s “jam”, if you will. We have A LOT of them and it’s a fun way to spend a Saturday, whether you are looking for something specific or just want to browse for ideas.

I wasn’t in buying mode yesterday. I have my annual girls’ trip coming up later this week to Charleston so I’m keeping my bank account ready for that! But … I did find a few treasures. And it was just so fun and festive to be out and about in town. 

One of my favorite shops is Harlow’s House, which has two levels of a building downtown. I walked in and, well, I wanted everything in sight! (Did I say I wasn’t in buying mode? Well … it’s probably more appropriate to say I abstained but it was difficult!)

Another favorite store of mine is Atelier, which is actually more than an occasional sale. Atelier is open Thursday-Sunday most weekends of the year, thank goodness. It’s small but jam-packed with so much amazingness!

This is where I decided I couldn’t leave the store without this white and red enamelware box. I collect enamelware and I’d never seen a piece like this. I’m quite sure it’s brand-new and not vintage but that doesn’t matter to me – it’s just so adorable! (And only $7!) I’m not sure if it’s a lunch box or a recipe box, but either way, it will look perfect on my kitchen windowsill.

My other shopping stop for the day was Zion Lutheran Church’s “Harvest of Hands” sale. Do you remember church bazaars that sold homemade crafts, decor, and food? Well, that’s what this event is – with all proceeds going to fight hunger. I found these amazing kitchen washcloths, which are exactly like the kind my mother-in-law used to get for me because she knew I loved them. I also snagged the last jar of homemade blackberry jam, which will be perfect for a new crispy waffle recipe I want to try soon.

Oh wait. I did make one more stop. 😉 How I could I forget? A Wreath of Franklin is a women’s clothing and home furniture / decor store in downtown Buffalo and it is stocked to the gills with all kinds of stuff. Seriously – I have no idea how they handle inventory because there is just so much of it! As luck would have it, everything in the store was 25% off and because I can’t resist 1) a good cross body bag and 2) anything Paris-related, this bag spoke to me. It will be perfect to travel with to Charleston and the colors will go with pretty much everything in my wardrobe! (It’s made from vintage military surplus fabric, too, so kind of cool!)

So after all this shopping, I headed back home and cooked up a storm! There is just something about being able to spend a few leisurely hours in the kitchen on a weekend that eases any stresses and just makes me happy.

I made homemade focaccia bread for the first time ever! Truthfully, I used to be rather intimidated by making bread … the yeast, the kneading, the sit time – but it’s actually been fun for me to delve into it a little. (And the dough hook for my Kitchenaid mixer does the heavy work for me!) This Homemade Focaccia Bread recipe from Longbourn Farm rocks!

I also tried this Spaghetti Hotdish with Garlic Bread Crumb Topping from A Farmgirl’s Dabbles, and as usual, Brenda’s recipe did not disappoint. If I’m being honest, I am the only one in my little family who really loves spaghetti pie. However, I think I made a convert out of Teacher Man with this recipe. He told me last night – no offense meant, by the way – that this was a step up from my usual spaghetti pie. And he’s right! This recipe totally ramps it up in the best ways. So good!

Apple Fritter Bread with Maple Glaze

Apple Fritter Bread with Maple Glaze

Ingredients
  

For the apples

  • 2 medium apples peeled and finely chopped (1/4-inch pieces or smaller)
  • c. brown sugar packed
  • 1 tsp. cornstarch
  • 2 tsp. ground cinnamon

For the bread

  • c. all purpose flour
  • ½ c. granulated sugar
  • tsp. baking powder
  • ¼ tsp. salt
  • pinch nutmeg
  • 2 eggs
  • 2 tsp. vanilla extract
  • ½ c. 1 stick unsalted butter, cold
  • ½ c. sour cream
  • 2 tbsp. whole milk

For the glaze

  • ½ c. powdered sugar
  • 1-2 tbsp. half-and-half
  • 2 drops or so of maple extract optional

Instructions
 

  • Preheat oven to 350 degrees.
  • Butter a 9x5-inch loaf pan - or spray with baking spray, and set aside.
  • In a medium size mixing bowl combine the chopped apple, brown sugar, cornstarch, and cinnamon.
  • Toss to evenly coat the apples, set aside.
  • In the bowl of a stand mixer, mix the flour, sugar, baking powder, salt, and nutmeg on low.
  • With mixing speed on low, gradually add the butter one tablespoon at a time.
  • Continue mixing until crumbs form, about 2 minutes.
  • Add the eggs, vanilla, sour cream and milk.
  • Beat on medium-high speed until light and fluffy, about 1-2 minutes, scraping the bottom of the bowl half way through.
  • Pour half of the batter into the prepared pan.
  • Add half the apples mixture. Lightly pat the apples into the batter.
  • Pour the remaining batter over top, then the remaining apples.
  • Use a knife to swirl it together a bit.
  • Place in oven and bake for 45-60 minutes, or until the center is set.
  • Baking time will vary, so watch it at the 45 minute mark & test for doneness.
  • Remove from the oven and allow the bread to cool for 30 minutes in the pan before removing.
  • To prepare the glaze, whisk together the powdered sugar, half-and-half, and maple extract.
  • Add more half-and-half or powdered sugar to reach desired consistency.
  • Drizzle glaze over bread, allow 15 minutes for the glaze to firm up.

Notes

Any good, tart apple will work here - like Honeycrisp or Granny Smith.
You can substitute milk for the half-and-half in the glaze recipe if that's what you have on hand.
I didn't measure the maple extract - I just put about 2 drops in; don't go crazy - you don't need much to get that yummy maple flavor. (This can also be omitted or vanilla extract is a good subsitute if you don't have maple extract on hand.)
