It feels soooo good to be back to blogging this week. (Can you tell? I’ve written three posts, three days in a row!) 

With Easter coming up this weekend and some turkey breakfast sausage taking up space in my freezer, I figure this #TurkeyTuesday is the perfect time to showcase a new recipe that’s ideal for Easter Sunday breakfast or brunch – Egg and Turkey Sausage Bake.

I love the color mix of red pepper and parsley in this particular recipe – and the turkey sausage flavor really shines through.

To me, this is more the consistency of a bread pudding than an egg bake. However, that might be because I didn’t actually measure the bread cubes for the recipe. (Gasp!) I sliced a large French bread baguette and threw all the cubes into the bowl with complete abandon. 

This doesn’t bother me for two reasons:  

1) I love bread. In fact, if I lived in Paris right now, you would probably find me picking up a fresh baguette every night after work to take home. Sometimes all I crave is thick, crusty bread with butter.

2) I’m so proud of myself for not measuring! I say this because I am a rule follower in life and feel lost without a recipe. But since I’ve been blogging and trying new recipes every week, I’ve gotten a tad bit more adventurous. I’m not ready throw out my cookbooks, mind you, but this was a big step for me. 😉

In any case, I don’t think you can go too wrong here – measure the bread cubes or don’t measure the bread cubes. What’s important is the flavor of the turkey sausage with the peppers, parsley, Swiss cheese, eggs, and bread. It’s all good, let me tell you.

Egg and Turkey Sausage Bake

Servings 8

Ingredients
  

  • 1 16-ounce package JENNIE-O® Lean Turkey Breakfast Sausage Roll
  • 2 cups egg substitute or 8 eggs
  • 3 cups milk
  • ¼ cup chopped fresh parsley
  • salt and freshly ground pepper if desired
  • 8 cups cubed French bread
  • 1 cup chopped red bell pepper
  • cups shredded low-fat Swiss cheese divided

Instructions
 

  • Heat oven to 350°F. Grease 9 x 13-inch baking pan; set aside. Cook the sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Crumble sausage into pieces.
  • In large bowl, whisk eggs, milk and parsley.
  • Add salt and pepper, if desired.
  • Stir in sausage, bread cubes, red pepper and 1 cup cheese.
  • Pour into baking dish.
  • Sprinkle with remaining cheese.
  • Bake 40 to 45 minutes or until a knife inserted into the center comes out clean.
  • Let stand 10 minutes before cutting into squares to serve.
